Anyone who reads me regularly on some of my other blogs knows that I am a fool for my crockpot for lots of reasons. It makes for cheap and easy cooking, and I am definitely cheap and easy. (Wait. That didn’t come out right….)
Today I made a batch of black beans to freeze, and with God as my witness, I will never buy canned beans again.
And it was cheap. And easy.
(Like me.) (Kidding!) (But not kidding about the crockpot thing.)
I have done this, too! I think the keys are to soak, dump that water, and then cook in fresh water – it helps them taste better, I think. Also, they need some seasoning – the canned ones have their share of sodium, so you need a decent amount of salt.
I love having little containers of black beans in my freezer. I’m one of those crazies with a year’s supply of food in my basement, and I buy 6-gallon buckets of beans and this is a great way to use them. A can’s worth costs pennies. I do flavor them a bit, though, with a bay leaf or two and then some salt at the end.
i have never used a crockpot. always soak, drain, wash and pressure cook it. it is quick (10 minutes) easy and convenient. 🙂 good luck with ur recepies.

Check it out! Sometimes I forget I have a crock pot, and then other times I’m just not too inspired by the old stand-by recipes. This reminder – a recipe, a sort of review, and even suggestions for variations — is just what I needed. I made a Jamaican Pumpkin soup she sent last week for a party I had on Sunday and folks raved about it. It was honestly one of the best things I have ever served to guests.

Fantastic, in all its various forms (Cuban, Southwest, and immered down into enchilada filling). Plus, you can make a ginormous batch and freeze some to use later. LOVE this stuff.
