A while back when our family was having a tough time, a sweet friend of mine delivered a “care package” for us that was full of snacks. First, I was deeply touched that she’d gone to the trouble to do that for us, and second, I pulled out the bag of included chips and went, “What the heck are these??” The “these” in question were Simply 7 Lentil Chips, and while I like lentils as much as the next hippie, I was skeptical, to say the least. But! They were delicious, and they were also 1) gluten-free, 2) high in protein, and 3) a good source of iron. What’s not to love?

I recently bought these from costco. They do have rice in them so not as low carb as would seem at first glance but look gluten free and pretty darn tasty.

Is anyone else irritated with Amazon’s new S&S shipping policy? I have standing S&S orders (Pull-Ups and Annie’s vegetarian chewy rabbits), and Amazon won’t ship these chips until it’s time for my regular S&S shipment in Feb. The environmentalist in me understands and appreciates the smaller footprint but the impatient child in me wants my stuff NOW NOW NOW!
