Today’s feature is all manner of gingerbread, and while the biggest deals are on the fancy kits if you’re inclined to go that way, if you want a decent box mix for a school project or otherwise baking for a huge crowd, your best bet is this 12-pack of Betty Crocker mix via Subscribe & Save (it comes out to about $1.70/box).
I’ve been doing okay with the no-wheat thing, but all this gingerbread is making me a wee bit nostalgic for the Evil Wheat. Sigh.
Just look at for shipping! Took me awhile to find a gingerbread kit that was prime… the one I wanted would’ve cost 3x its price in shipping to get it here in 2 days.
Mmmm, gingerbread. My birthday is in the beginning of December. My kids made me gingerbread for my “cake”. Yum yum yum. I feel bad that you can’t have any of the gingery goodness. Sniff. I will think of you when I have my next piece.
I wonder if a gluten-free flour mix would work well to make gingerbread. I must experiment….
Do you like to bake? You can make yourself some GF gingerbread. I love the blog Gluten-Free Girl, for the writing alone, but her recipes always sound fantastic. I just don’t bake enough to invest in four kinds of GF flour to try some of her recipes. But here’s her version of gingerbread.

Perhaps this may help.
Gingerbread Recipe (Gluten-Free)
½ cup dark brown sugar
¾ stick butter, softened, creamed
1 cup un-sulfured molasses
2 cups Gluten Free Flour Mix
½ teaspoon soda
1 ½ teaspoon ginger
½ teaspoon cinnamon
Dash pumpkin pie spice mix (ginger, cinnamon, nutmeg, cloves)
1/3 cup buttermilk
1/3 cup milk 2%
1 egg
Mix with a fork or whisk, might need tiny bit more milk, should be like a cake mix. Pour into loaf pan and bake at 350F for about one hour.

Do the stores not carry it? I don’t know about Gingerbread (but I will check), but my local chain has started carrying dozens of different Gluten-Free cake mix varieties. I think of you every time I walk down that aisle. 🙂
