Gluten-free? Rejoice!

I’ve now been gluten-free for about a year (hard to believe it’s been that long!), and I feel so much better. I love how giving up gluten is one of those things where you don’t know how crummy you felt until you stopped feeling so crummy. Heh.

If you are still happily eating gluten, congratulations, and please go have a big slab of cake on my behalf. (No, really. Today’s my anniversary! Eat cake!)   2. Any suggestions on a gluten free baking for someone who happens to be allergic to almonds? I can’t use pamela’s due to the almond flour 🙁

    Try substituting ground flax seed – it’s very tasty, relatively cheap, and chock-full of those whaddayacallems… oh, yeah, nutrients. 😉

  6. I completely concur. Pamela’s is the ONLY GF pancake mix worth buying. Everything else tastes like dust, grit, and water. Yuck.

  10. Try the Namaste brand of products. They are free of nut flours. And pretty darn good too! They also have an amazon coupon available right now.

    I’m not celiac, but i do follow a wheat free diet.

  11. Yes, for those who have already mentioned it, Pamela’s is great but it is not dairy free and most of their cookies also have eggs. But their brownie mix is fabulous and dairy and egg free. Don’t know about soy or almond. I happily picked up a case of the brownie mix. Thanks for the heads up.
